After my first foray into French Toast, I decided my life needs more.
So, I decided to develop my own recipe. And since these Banana Caramel Cupcakes were so popular last year, I knew that I had to try that combination along with crisp, crunchy fried bread.
Oh my word. What a taste sensation. As soon as OH and I bit into a big ol’ bit we both went “OMG this is insane!!”




Despite living in close proximity to Ireland for a third of my life, and despite my many tries, I’ve never quite found a taste for Guinness. Something about its deep earthy taste reminds me of blood. Appetizing, no? Maybe that’s why they say its so good for anemia. Who knows? But I can tell you that I’ve offended a lot of people with my distaste for the beverage, and I keep trying to find a way to make it delicious.


My latest quilt pattern is called Windmills at Night.  I designed it specifically for beginning quilters, using pre-cut fabric strips called “jelly rolls”.  The bright red fabrics touch off the black and white fabrics beautifully, and this striking lap quilt will make a fabulous addition to your decor. 



Here’s an Easter treat that is decorative, delicious, and filled with whatever you please. A hollow chocolate egg can hold jelly beans, chocolate eggs, marshmallow bunnies, or even money. You can even leave both sides of the egg in the molds while you fill them with fudge, and then assemble the egg once the fudge is set.


I finally got around to a project I’ve had pinned for years…a Spring Tulip Wreath diy! I’m so excited with how easy it was and honestly how quick it was to complete.  I friend of mine on Facebook recently completed her own wreath and that ended up being the final bit of inspiration I needed!



I’m a big snacker.  Lately, I’ve been trying to eat healthier snacks.   Sorry, Girl Scouts, but it’s true.  While I have a secret love affair with Thin Mints and Peanut Butter Patties, let me just tell you that I’d much rather be eating a plate of fresh veggies with some ranch dip.

Leftover Mashed Potatoes Into Potato Cakes

Several weeks ago I found myself with an abundance of potatoes and realized there was no way RancherMan & I could eat them all before they went bad.  I went into high-gear preservation mode & dehydrated many of them, but some of them went into the freezer.  When I freeze potatoes I cook and mash them but add nothing else – no salt, pepper, milk or butter – just cooked mashed potatoes.  I section them in sandwich bags into serving sizes & freeze them into individual bricks. To use them I’ll pull a brick of frozen mashed potatoes out of the freezer the night before and allow it to thaw in the refrigerator overnight.  (The thawed mashed potatoes usually release quite a bit of water and that potato water is not wasted but poured into my weekly endless soup pot.)
