Knowing When To Harvest - 4 Basic Signs

We had a great garden season and it looks like harvest season is going to be wonderful also!  Tthis post is my 18th "Contributing Angel" post (Thank you  again to my friend Angel for allowing me to contribute to your amazing blog!)
If you are new to gardening or even if you are a seasoned pro - it's always good to go back to basics - below are the 4 basic signs to knowing when to harvest.

1. Timing 
Know what you planted and know the timing of each variety.  Let's use green beans as an example - on the back of the seed packet you will see something like: "60 day green beans" or "45 day beans" - it will tell you the estimated time that it will take until harvest time.  (click HERE for some great bean ideas).  This is helpful not only to know when to plant your seeds but also to know when to start looking for fully grown produce.
There are other variables involved in timing like weather.  Not every year will your beans be ready for picking on the exact date or by the exact timing on the packet because it might have been a dry weather year and that will throw that timing off by a week or so.  You may also want to use some of the other signs also in "knowing when to harvest".  (If you are a new gardener, I suggest placing a star on your calendar & the name of the vegetable on the date that you estimate harvest to begin).

2. Color 
Color is the next best way to know when to harvest.  Again, you must know what you planted!  Take tomatoes as an example - I grew many different varieties of tomatoes & they are all different colors.  The yellow orange low acid tomato and a black variety (which actually ripens when it is a deep dark burgundy) and a striped Roma.  Color will not always help with everything that you grow - like green beans - they will always be green - just know what you are growing.

3. Size 
Size is another great way to know when to harvest.  Zucchini is a perfect example of a vegetable that can be harvested at almost any size.  You pick zucchini by your size preference.  When I am making a salad I always pick a small tender zucchini to cut up and eat raw on top of my salad (see the left picture above).  Then, if I am baking zucchini bread I will shred a larger zucchini (see right picture above) (click HERE for some great zucchini ideas).  Again, know what you are growing to know if it can be harvested at many different sizes.

4. Leaves/Stem
The plant leaves or stems are another way to know if your garden produce is ready for harvesting.  Look at the left picture above - you will see that I picked a greenish tomato with a green stem and then a perfectly ripe tomato with a brown dried up stem.  Also, with squash - the vine and leaves will dry and crumple - that is when it is ready to harvest. 
There are some vegetables where this leaf/stem sign is the only clue to know when to harvest and a good example of this is potatoes and sweet potatoes.  The plant and leaves will turn brown and become brittle and dry - you will follow that dried up stem to the ground and voila - glorious potatoes!  (click HERE to view how to harvest potatoes)
Again, know what you are planting and then look for these harvesting signs.

A house is not the only thing in need of Spring Cleaning – don’t forget about the Garden!  The difference between an enjoyable time working in the yard and a hated “waste” of time is using the correct tool for the job.  Always use the proper tools! – and don’t rush – Patience is essential when Gardening.

Zucchini Recipes You'll Love

I love zucchini and I've been trying out different dishes on my family.   
In the summer I'm always looking for different recipes to make with fresh vegetables. 
Vegetable of the Week: Zucchini
I've found three recipes that my whole family likes, hope you like them too.   


Four-Cheese Zucchini Strata



ingredients
  • 4medium zucchini, halved lengthwise and cut into 1/4-inch slices (about 5 cups)
  • 2tablespoons olive oil
  • 8cups garlic-flavor Italian flatbread (focaccia) cut into bite-size pieces
  • 1cup shredded provolone cheese (4 ounces)
  • 1cup shredded white cheddar cheese (4 ounces)
  • 1/2cup crumbled feta cheese (2 ounces)
  • 1/2cup grated Parmesan cheese
  • 7eggs, lightly beaten
  • 2cups milk 
  • 2tablespoons snipped fresh parsley
  • 1/2teaspoon salt
  • 1/2teaspoon ground black pepper
  • Snipped fresh parsley (optional)


  • directions

1.Lightly grease a 3-quart rectangular or oval baking dish; set aside. In an extra-large skillet cook zucchini in hot oil over medium-high heat until light brown, stirring occasionally. Remove from heat. Place half of the bread pieces in the prepared baking dish. Top with half of the zuchini and half of each of the cheeses. Repeat layers.
2.In a large bowl combine eggs, milk, parsley, salt, and pepper. Pour evenly over layers in baking dish. Using the back of a large spoon, gently press down on layers. Cover with plastic wrap and chill for 2 to 24 hours.
3.Preheat oven to 325 degrees F. Remove plastic wrap. Bake for 45 to 50 minutes or until set and an instant-read thermometer inserted into the center registers 170 degrees F. Let stand for 10 minutes before serving. Sprinkle with additional parsley if desired.




Zucchine Pizza Boats
Zucchini Pizza Boats- Slice the zucchini in half. Slice off the bottom to keep in stable. Brush with olive oil and top with garlic or garlic powder. Top with sliced tomatoes, salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend.. Bake 375 for 20 to 30 minutes until soft.

Use mozzarella cheese, Parmesan cheese or mixed blend.. 
Bake 375 for 20 to 30 minutes until soft.



Zucchine Parmesan Crisps
Zucchini Parmesan Crisps

Ingredients

1lb. zucchini or squash (about 2 medium-sized)
¼cup shredded parmesan (heaping)
¼cup Panko breadcrumbs (heaping)
1tablespoon olive oil
¼teaspoon kosher salt
freshly ground pepper, to taste


Directions

Preheat oven to 400 degrees. Line two baking sheets with foil and spray lightly with vegetable spray. Slice zucchini or squash into 1/4 inch-thick rounds. Toss rounds with oil, coating well. In a wide bowl or plate, combine breadcrumbs, parmesan, salt and pepper. Place rounds in parmesan-breadcrumb mixture, coating both sides of each round, pressing to adhere. The mixture will not completely cover each round, but provides a light coating on each side. Place rounds in a single layer on baking sheets. Sprinkle any remaining breadcrumb mixture over the rounds. Bake for about 22 to 27 minutes, until golden brown. (There is no need to flip them during baking -- they crisp up on both sides as is.)
