Blueberry Muffins
I absolutely love blueberry muffins with a hot cup of coffee.
I made these last night after the kids went to be so they could
have them today for breakfast. I had to try them last night
to make sure they turned out okay, right?
INGREDIENTS
- 6 tablespoons unsalted butter, room temperature
- 3 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 1/4 cups sugar, plus more for sprinkling if desired
- 1 large egg
- 2 large egg yolks
- 1 teaspoon pure vanilla extract
- 1 cup milk
- 1 3/4 cups blueberries
DIRECTIONS
STEP 1
Preheat the oven to 375 degrees. Butter or cooking spray large (3 3/4 inches) or small (2 3/4 inches) muffin tins, and set aside. In a large bowl, sift together flour, baking powder, and salt; set aside.
STEP 2
In the bowl cream butter and sugar on medium speed until fluffy, about 3 minutes. Add egg, egg yolks, and vanilla; mix until well combined. Reduce speed to low; alternate adding reserved flour mixture and milk to batter, beginning and ending with flour. Gently fold in berries by hand. Divide batter among muffin tins, I like using an icecream scoop for this step; sprinkle generously with sugar if desired. Bake until light golden, about 45 minutes for large muffins, about 30 minutes for small muffins. Cool in pan 15 minutes. Remove from pan; transfer to wire rack, and let cool completely
This recipe was adapted from a Martha Stewart recipe from several years ago.

Blueberry Muffins
Blueberry Muffins
I absolutely love blueberries. So we often have blueberries in some form or another.
This morning I couldn't decide if I wanted fresh or cooked so we had both.
These beautiful muffins are chocked with fresh blueberries and topped with
cream cheese sauce and for then fresh blueberries on the side.
I feel healthier already. This is such a well rounded breakfast, lol.
I have fruit, dairy, bread, cheese, wow how healthy am I?
As you all know by now you all are invited to drop in for coffee and muffins.

Blueberry Breakfast Loaf
Hello Everyone
I wanted to share this little semi-homemade treat with you.
I love blueberries and cake, so what could be more perfect. This is so simple and your whole house smells wonderful. I love to cook but my time is limited now with Jacob into everything. So between kissing owies and cleaning up spills, dirty diapers, torn magazines, milk on the wall, spaghetti in the hair, bed covers pulled to the floor, toilet paper rolls tossed in the toilet, bath water everywhere, toys that I've tripped on, coffee that I spilled, dirt clots that Jacob stuck in his pocket as a "pesant" for mommy, oh sorry, you get the point. Anyway in my spare time I've had to resort to semi-homemade foods. So without further ramblings from a tired mommy, here's my creation.
This is so simple. Take 2 packages of Betty Crocker Blueberry muffin mix, add 1 tablespoon of butter, 1 tablespoon of orange juice and a cup of fresh blueberries. The orange juice will bring out the fresh sweet taste of the blueberries and the butter adds flavor and texture. Mix with water and bake for 25 minutes and my family comes sniffing through the house. Jacob loves this little loaf and I love making it for my favorite little man.
