Apple Streusel Pancakes

Diced apples add chunky sweet goodness to this easy Bisquick Pancake batter, and then before they are flipped you top them with crunchy brown sugar and oatmeal streusel for a pancake flavor you will never get enough of.

This little goody is a Betty Crocker recipe.  My kids love it with maple syrup and whipped cream.  I love it topped thick with fried apples in thick gooey sauce.  Yummm.  Then I slather it high with whipped cream.  Oh, yeah!  There are so many great toppings to experiment with.  No matter how you top it, it's delicious.  Add a side of bacon and you got a plate licking good meal.

I have tons of Betty Crocker recipe books.  I've collected them for years.  Some of the really old books have so many recipes that you can revamp and create your own version.  My kids love to experiment with all kinds of food so it is always fun letting them pick out what they want to try and what changes they want to make to the recipe.

Here's the directions to create your own easy, sinfully delicious, quick breakfast.

Streusel Topping
1/4 C packed brown sugar, plus 2 tablespoons
1/4 C all purpose flour,  I use Gold-Medal
1/4 C quick cook oats
2 tablespoons COLD butter

Pancake Ingredients
2 C Bisquick
1/2 tsp cinnamon
1/4 tsp nutmeg
1 C milk
2 eggs
1 cup peeled, diced apples,  about 1/4 inch diameter

Topping Options
Fried Apples
Maple Syrup
Powdered Sugar
Whipped Topping
Fruit Toppings

Directions
In medium bowl, mix brown sugar, flour, oats, cinnamon and nutmeg. Cut in butter using pastry blender or fork until mixture is crumbly. Set aside, in fridge if you are not going to use immediately to keep cold.

In large bowl, stir all pancake ingredients until well blended. Heat nonstick griddle to 350°F. or 12-inch skillet over medium-high heat. (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Brush lightly with vegetable oil or spray with cooking spray before heating to help prevent streusel from sticking to griddle.

For each pancake, pour 1/4 cupful batter onto hot griddle. Sprinkle each pancake evenly with scant 2 tablespoons Streusel mixture. Cook 2 to 3 minutes or until bubbly on top and dry around edges. Turn; cook other side until light golden brown around edges about 1 minute to 1 minute 30 seconds. Scrape off griddle between batches of pancakes if necessary.

To serve, serve pancakes Streusel side up and top as desired!
